Last Saturday 13th...

Last Saturday 13th was a huge success at Café Struik. All because of you. Thank you all for bringing your partners, friends, colleagues and even pets ;o) Want to share some of the moments, which you all participated, or willing to be part of next time. Indeed there will be more cooking sessions in the near future with some of the best Dutch produce! Keeping you all posted.

Sharing with you all more photos of the The Dutch taste experience. Some people normally ask me where I purchase the fresh ingredients. Is not a straightforward answer. Because always depend on the season, butcher, fish monger and the veggie store. Biological markets and travelling outside Amsterdam, enables me to be introduced to what is best produced in Holland. Perhaps you want to join me of these days ;o)

The Dutch taste experience

Hi everyone!

The colder days are setting in. Should this be the time to be nostalgic about the warm summer days or to embrace all the magic of autumn?
Correct, this early autumn magic brings us back the great season flavours. From a thick kabeljauw fillet to the first stews and/or adding a bock beer (soon).
A friend challenged me to make a representative meal of Dutch gastronomy for someone who has never enjoyed a thorough local meal. Below you can find the menu I created for that special evening. It was indeed a memorable experience with all the dishes brought over the table.
Observing my guest´s expressions reminded me a bit of the 1st taste experiences I had with home made Dutch food. Et voilá, everyone was delighted and pleased by the wonders of a heart-warming 4 course meal straight from my kitchen.
The beverage selection also matched perfectly with the hearty food selection.
I will soon share some nice shots of the assembled dishes as well.
Glad to share this interesting challenge and I will keep you posted on future ones ;o)

Independence day by the canal

The action took place on the 4th of July in Lijnbaansgrach, Workcycles Amsterdam. The reason... Independence Day. An amazing friend of mine invited me to take over the grill to make some traditional US delicacies. Such as dogs, burgers, corn, and some chicken. But also to present some of my own Dutch food deviations.
The BBQ could not have been any better. Lots of sun, biological meat, salads, beers and bunch of friends. What could go wrong? Well, I guess some pacing through wishful bikers to join the feast and us taking over the street.
Some BBQ folks were curious about the infamous rabbit with pears ( published in Het Parool)and what better occasion to share. But also made some hapjes with pork belly (scroll down for the recipe)

Corn

 Rabbit with pears. In the background 2 fingers tall bio beef burgers and pork spice sausages.



  
Recipe in assembly order:

- Slices whole wheat bread(volkoren) lightly toasted over the charcoal.
- Home made spread: créme fraiche and finely minced mustard 
- Slices of cucumber 
- Slices of pork belly
- Radish sprouts
- American flags were sold out!!!

Dat was het. Heel lekker ;o)



Can almost bet next year there will be firework!!!

BBQ in Flevopark - 2


Some of the highlights of this BBQ was sharing a great weather with amazing friends and great food. Also my fav in this session was The Mackerel. Is normally an under rated fish, because of the bones and dryish fillet. However if you don't cook it to the bone you can have a echt lekker experience. This one I cooked had a bonus... 35grs of roe ;o)
 





And because the all purpose of BBQ in the park is about sharing, what about some high caliber chopped season asperges!!! I drizzled with my home made vinaigrette sauce.
